Weekending: Last One for April
Happy Monday, and Happy May! Did everyone have a good weekend? Ours went by in a flash, as they always seem to do, but here's a little weekend rewind:\\ FRIDAY
+ We met my friend Sarah and her two boys at Play Street Museum, one of our favorites! Walker loves wearing this astronaut costume my parents got him for Christmas, and was just thrilled to pieces to learn that the museum had a pretend space shuttle for the kids. He's recently really obsessed with space and told us he wants to go to Mars. ;) I'm all for that!
+ We picked up Chick-fil-A for lunch, and Brandon was home in the early afternoon. it was so good to see him after six days!
+ We had a super lazy evening: Brandon grilled steaks and I made sweet potatoes and these delicious Brussels sprouts, and we watched an episode of "Dateline" when the boys were in bed. I loved every minute of that laziness!
\\ SATURDAY
+ Brandon made pancakes for breakfast, and this cutie ate four mini ones. I was shocked and honestly don't even know where it all goes!
+ Walker had soccer, and I'm just going to leave this photo right here to sum up his soccer season. ;)
+ We spent a super lazy day at home and it was wonderful! The weather was pretty gross, so I was able to get lots done around the house, including cleaning out my closet. {All the praise hands for that one!}
+ My aunt joined us for supper. I made a super simple supper of cranberry chicken {recipe below}, wild rice and broccoli. Easy and delicious!
\\ SUNDAY
+ Brandon and Walker got to work on his monthly Koala Crate subscription; this month's theme was bugs!
+ We went to Southlake's annual Art in the Square, but it was a bit of a bust because the weather was super windy and it was quite chilly! {Only in Texas can it be 92* one day and 59* the next. Sigh.} Anyway, we had fun walking along and seeing all of the art, but the bounce houses weren't inflated due to high winds and so we packed ip and went to Chuy's for lunch. Walker was a bit disappointed to not jump on the "jump jumps," but it was nothing an orange push-pop from Chuy's couldn't fix. ;)
While we were at Chuy's, Knox grabbed the extra limes I always ask for for my water and he started to go town on them. Needless to say, I don't think they tasted very good to him. Ha!
+ We came home for naps for all of us, then Brandon and Walker got haircuts, and then we took Walker to pick out a toy at Toys 'R' Us for having good weekend behavior.
+ We had leftovers for supper, then we just lad a low-key evening of baths and bed for the boys, some blogging for me, watching an episode of "Murder Made Me Famous" on the Reelz channel, and getting stuff ready for the week.
Knox loves Karen Katz lift-the-flap books! "Splish, Splash, Baby!" was in his Easter basket. |
And as promised, here's that easy, delicious cranberry chicken recipe:
Cranberry Chicken
4 chicken breasts
1 can Ocean Spray whole cranberries
1 bottle Wish Bone Russian dressing (if you can't find Russian, Catalina may be substituted)
1 envelope Lipton Onion Soup Mix
1. Preheat the oven to 350 degrees. Grease a 9x13-in. pan and place chicken in it.
2. In a small bowl, mix together the entire bottle of the dressing, cranberries and Lipton Onion Soup Mix.
3. Pour mixture over chicken breasts and bake for 1 hour.
*Serve over brown or wild rice and serve with vegetables.
